I don’t know about you but my kids go through phases with their eating where they love something and can’t stop eating it then won’t eat it again for weeks. Bananas fall victim to this habit a lot so I often find my fruit bowl boasting brown softening bananas.

Banana Chocolate Marble Cake

 

Ingredients

1 1/4 Cups Plain Flour, siftedBanana Chocolate Marble Cake. I'm a big fan of the traditional banana bread and of course love love love choccie so the idea of combining the two was too hard to resist!

1 Cup Sugar

3 1/2 Tsp. Baking Powder

1 Tsp. Salt

115 g Butter

2/3 Cup Milk

1 Tsp. Vanilla Essence

1/3 Cup Milk

30 g Dark Chocolate

1/4 Tsp. Bi- Carb Soda

2 Tbsp. Warm water

4 Egg Whites, unbeaten

2 Bananas, unpureed

Chocolate Frosting

115 g Butter

2 Cups Icing Sugar

1/2 Cup Cocoa Powder

1 Tsp. Vanilla Essence

Milk

 

 Method

Sift dry flour, sugar, baking powder and salt together in a bowl.

Add butter, the 2/3 cup milk, and vanilla essence.  Beat for 2 minutes.

Add another 1/3 cup milk and the unbeaten egg whites.  Beat 2 more minutes.

Separate batter in 3 parts.

Melt the dark chocolate.

Add the bi- carb soda and warm water to the chocolate, mix and then add this to 1/3 of the batter.

To another 1/3 of the batter, mix in the puréed banana.

Spoon batter alternately in a greased 20 cm round pan.

Swirl knife through batter to marble. Bake at 180° for 30-40 minutes.

Once cool, frost with chocolate frosting.

For Chocolate frosting

Beat butter and icing sugar together.

Add cocoa powder.

Add milk by tablespoons untill thick enough to spread (approx 4 tablespoons).

Add vanilla essence.

Enjoy!

    Oh yum! I love banana bread (so do my boys!) but I’ve never tried it mixed with chocolate like this. It looks delicious and is a great way to use up some overripe bananas! 🙂
