I don’t know about you but if I told my kids they could have dessert for breakfast they would literally be falling over each other to get to the dining table.  Breakfast doesn’t have to be boring and it doesn’t have to be a battle to get your kids to eat healthy food.

One of my children’s favourite breakfast is loaded full of fibre and protein it’s also gluten free, dairy free, refined sugar free and is well just a great example of real food.

It is so good my kids ask for it on repeat.  The best thing is it is super simple to prepare and you can make enough in advance to last the week.

So without further ado I present to you Choc Caramel Chia Pudding.  This little guy will provide your kids with sustainable energy to get them through even the busiest days.  The caramel alone will be a ridiculous success and you will feel great knowing you have served them up a delicious healthy breakfast.  Go you!

Choc Caramel Chia Pudding

 

This Choc Caramel Chia Pudding is loaded full of fibre, protein is also gluten free, dairy free, refined sugar free and is a great example of real food.

Ingredients

(makes 4)

 

1 cups of chia seeds

1 cup cacao powder

Vanilla pods or essence

2 x 250 cans of coconut milk

1 ½ cups of almond milk

4 medjool dates (pitted)

½ cup coconut milk/almond milk in addition to above

Rice malt syrup or honey

Berries to serve

 

Method:

1.Combine chia, cacao, vanilla, coconut milk, almond milk and honey in a blender

  1. Pour into glass ½ full and set aside. I prefer to reuse glass jars.
  2. Combine the 4 medjool dates and 1/2 cup coconut milk in a blender or food processor. Whiz until a smooth consistency is achieved. You now have the most amazing refined sugar free caramel you will ever taste!! Simples
  3. Add caramel to pudding mixture and stir through slowly.
  4. Set in fridge for 3-4hrs or until pudding is hard
  5. Add berries to serve.

  1. That looks so delicious and I can eat it!!! I love dates to make a caramel sauce – so much healthier and I can eat it because it is dairy free! I’ll make it and let you know how fast my kids gobble it up 🙂
